Ingredients

Dough:

  • 1 Egg, well beaten
  • 1 Cup Water
  • 3 Cups Flour

Directions

  1. Sweet Potato Filling: In a large pot, add salt, add Cubed Sweet Potatoes, boil, until soft and tender. Remove from heat, let cool.
  2. In a large bowl, add sweet potatoes, and mash.
  3. In same bowl, add cheese, bacon bits, mix until combined, set aside.
  4. For Dough: In a stand mixer, combine all dough ingredients, until dough is sticky. Remove dough from mixer, knead and cover for 10 minutes. Repeat process and cover for 10 minutes. Remove from mixer and form into a ball.
  5. Place dough on a floured surface, using a rolling pin. Roll out to 1/8” thick.
  6. Using a wide cup, press into dough shaping circles. Repeat for each.
  7. Fill centre with 1 Tsp. of Sweet Potato filling, wet edges of dough with water, fold over dough, forming a half moon. pinch edges together until completely sealed.
  8. Cooking: In a large pot of boiling water add 5-6 Perogies at one time, until they rise to the top. Repeat for remaining Perogies.
  9. In a skillet, on medium heat, add butter, Cipolline onions, sauté for 3 minutes, add boiled Perogies and bacon bits, fry until golden brown. Remove from heat garnish with bacon bits and green onions and serve with sour cream.

*After boiling Perogies and placing to the side add oil or butter to prevent from sticking together.
