Ingredients
- 2 Packages Harvest Fresh Cubed Sweet Potatoes
- 1 Bag Harvest Fresh Spinach
- 2 Harvest Fresh Shallots, sliced
- 2 Garlic cloves, minced
- 1 Cup Cremini Mushrooms, sliced
- 1/2 Cup Gruyere Cheese, shredded
- 1/3 Cup Cornstarch
- 1 Tbsp. Butter
- 1 Tbsp. Paprika
- 1 Tbsp. Parsley, chopped, garnish
- Bacon bits, garnish
- Salt and Pepper to Taste
Directions
- Sweet Potato Patties: In a large pot, add salt, add Cubed Sweet Potatoes, boil, until soft and tender. Remove from heat, let cool.
- In a large bowl, add sweet potatoes, cornstarch, mix until combined, creating a dough.
- In a large skillet, melt butter, add shallots, sauté, until translucent, add garlic, sauté until fragrant, add mushrooms, sauté, until browned, add spinach, sauté until wilted and water is reduced. Season with paprika, salt and pepper. Set aside
- For Assembly: Using 1-2 Tbsp of Sweet Potato form a circular Pattie, add a spoon full of spinach filling, top with shredded cheese. Wrap and fold until filling is fully sealed and flatten in a Pattie.
- Set Air-fryer at 375 degrees, coated with cooking spray, air-fry for 20 minutes, until cooked, remove from heat and ready to serve.
