Ingredients

  • 1 Cup Harvest Fresh Cubed Sweet Potatoes
  • 2 Cups Flour, all purpose
  • 2 Tbsp, granulated Sugar
  • 2 Tsp. Baking Powder
  • ½ Tsp. salt
  • 1 Tsp. cinnamon
  • ¼ Tsp. Nutmeg
  • 2 Tsp. Pure Vanilla
  • 2 eggs, beaten
  • 1 Cup Buttermilk
  • ¼ Cup Butter, unsalted, melted
  • Crushed Walnuts, Topping
  • Maple Syrup, Topping

Directions

  1. In a pot, add water, cubed sweet potatoes, boil on medium to high heat, cook until soft and tender. Remove from heat and let cool.
  2. In a bowl add cubed sweet potato, using a fork mash sweet potato until pureed.
  3. In a large mixing bowl, whisk flour, sugar, baking powder, salt, cinnamon, and nutmeg. Whisk until all combined.
  4. In a separate bowl, add eggs, buttermilk, Sweet Potato puree, and melted butter. Whisk until all combined.
  5. Pour wet ingredients over dry ingredients, mix until fully combined. Let rest for 15 minutes.
  6. Pre-heat waffle iron, once ready, spray with cooking spray, pour 1Tbsp. of sweet potato batter in each section. Close the lid and cook until golden brown, and fully cooked.
  7. Place in a dish top with maple syrup, walnuts, and your favourite fruit and ready to serve.
