Ingredients
- 1 Cup Harvest Fresh Cubed Sweet Potatoes
- 2 Cups Flour, all purpose
- 2 Tbsp, granulated Sugar
- 2 Tsp. Baking Powder
- ½ Tsp. salt
- 1 Tsp. cinnamon
- ¼ Tsp. Nutmeg
- 2 Tsp. Pure Vanilla
- 2 eggs, beaten
- 1 Cup Buttermilk
- ¼ Cup Butter, unsalted, melted
- Crushed Walnuts, Topping
- Maple Syrup, Topping
Directions
- In a pot, add water, cubed sweet potatoes, boil on medium to high heat, cook until soft and tender. Remove from heat and let cool.
- In a bowl add cubed sweet potato, using a fork mash sweet potato until pureed.
- In a large mixing bowl, whisk flour, sugar, baking powder, salt, cinnamon, and nutmeg. Whisk until all combined.
- In a separate bowl, add eggs, buttermilk, Sweet Potato puree, and melted butter. Whisk until all combined.
- Pour wet ingredients over dry ingredients, mix until fully combined. Let rest for 15 minutes.
- Pre-heat waffle iron, once ready, spray with cooking spray, pour 1Tbsp. of sweet potato batter in each section. Close the lid and cook until golden brown, and fully cooked.
- Place in a dish top with maple syrup, walnuts, and your favourite fruit and ready to serve.
