Ingredients
- 1 Package Harvest Fresh Riced Cauliflower
- 3 Harvest Fresh Nantes Carrots, peeled and sliced
- 1 Tbsp. Olive oil
- 2 Garlic Cloves, finely chopped
- 1 Onion, finely chopped
- ½ Cup Green and Red Pepper, finely chopped
- 1 Tsp. Garlic powder
- 1 Tsp. Paprika
- ½ Avocado, Sliced
- ½ Mango, Sliced
- ½ Cup pineapple, Chunks
- Salt to taste
- Lime Slice, Garnish
Dressing
- ¼ Cup Coconut yogurt
- ¼ Cup Pineapple, juice
- 2 Tbsp. Lime Juice, freshly squeezed
- 1 Tsp. Red Chili Flakes
- *Optional use Dressing of preference
Directions
- In a skillet, on high heat add oil. Once the oil is hot, reduce to medium heat and add onions, garlic, peppers, Nantes carrots, continue stirring and cook for 7 minutes.
- Add Cauliflower Rice, salt, garlic powder, paprika, continue stirring for 3 minutes. Once cooked remove from heat.
- Prepare dressing, combining all ingredients in a small bowl, mix well.
- In a large bowl, Add Cauliflower Rice mix, avocado, mangos, pineapple, dressing and mix well. Garnish with a slice of Lime and red pepper flakes and ready to serve.
