  1. In a large pot, on high heat, bring water to a boil. Add Chicken breast, let simmer on medium heat for 1 hr.
  2. Add onions, celery, Nantes carrots, and bouillon cubes, simmer for 45 minutes on medium heat.
  3. Remove Chicken from broth and cut the chicken in shreds and set aside.
  4. Add Spinach in broth, cook until wilted, then add shredded chicken, cook for additional 5 minutes. Remove from heat and ready to serve. Garnish with a Bay Leaf.
