Ingredients
- 1 Package Harvest Fresh Cubed Sweet Potatoes
- 1 Package Harvest Fresh Snow Peas
- 4 Harvest Fresh Cipolline Onions
- 1 Package Chicken Strips, cubed
- ¼ Cup Butter
- 4 Tbsp. Olive Oil
- 1 Tbsp. Paprika
- Salt and Pepper to taste
Directions
- Preheat oven at 400 degrees.
- In a large bowl, add cubed sweet potatoes, salt, black pepper, and 3 Tbsp. Olive oil, mix well.
- In oven tray, add cubed potatoes and spread evenly on the pan.
- Place in oven, bake for 20 minutes, until fully cooked and set aside.
- In a large bowl, add chicken, salt, pepper, paprika, and 1 Tbsp. Oil, mix well.
- In a skillet, on medium to high heat, add butter, once melted add chicken, cook until browned, and cooked. Then set aside.
- In the same skillet, add onions and sauté for 3 minutes, add snow peas and cook for 5 minutes, until cooked. Then add roasted sweet potatoes, and chicken and cook for additional 2 minutes. Remove from heat and ready to serve.
