Ingredients

  • 1 Package Harvest Fresh Riced Veggie Medley
  • 2 Harvest Fresh Shallots, diced
  • 2 Garlic Cloves, minced
  • 1 Cup Shredded Cheese, mixed
  • 1 Package Chicken or Turkey Stuffing, cooked as per package directions
  • 1lb Ground Beef, cooked
  • 1 ½ Cup Cremini mushrooms, finely chopped
  • 2 Tbsp. Butter
  • 1 Tsp. Salt
  • ¼ Tsp. Pepper

Directions

  1. Prepare chicken stuffing as per package directions. Once cooked, set aside.
  2. In a skillet, add 2 Tbsp. Butter, add shallots, sauté until translucent, add garlic, sauté until fragrant, add mushrooms, sauté until slightly browned, add riced veggie medley, sauté until, vegetables are soft and tender.
  3. Add cooked ground meat, cooked stuffing mixture, salt and pepper, mix until fully combined, add shredded cheese, mix until combined and cheesy. Remove from heat and ready to serve.

