Ingredients
- 1 Package Harvest Fresh Riced Veggie Medley
- ½ Package Harvest Fresh Spinach
- 2 Harvest Fresh Shallots, sliced
- 1 Large Tortilla Wrap
- ¼ Orange and Red Pepper, sliced
- 2 Garlic Cloves, minced
- 3 Eggs, Beaten
- 1 ½ Cup Mixed Cheddar, Mozzarella, shredded
- 2 Tbsp. Butter, salted
- 1 Tsp. Salt
- ¼ Tsp. Pepper
Directions
- Preheat oven at 375 degrees.
- In a frying pan, on medium heat, add butter, once melted add shallots, sauté until translucent, add garlic sauté until fragrant. Add peppers, sauté for 3 minutes, and add Riced Veggie Medley, sauté until vegetables have softened, add Spinach, sauté until wilted, add salt and pepper, mix until all combined. Remove from heat and set aside.
- In a baking dish, add Tortilla wrap, layer bottom with shredded cheese, add sautéed vegetables, eggs, and top with remaining shredded cheese.
- Place in oven for 25 minutes. Remove from heat, slice and ready to serve.
