Ingredients
- 1 Package of Harvest Fresh Riced Medley or
- 1 Package of Harvest Fresh Riced Cauliflower or
- 1 Package of Harvest Fresh Riced Broccoli
- 1 Large Egg
- 2 Tbsp. Milk
- ¼ Cup Breadcrumbs
- ¼ Cup Parmesan Cheese, grated
- Mozzarella, Cubed
- ½ Tbsp. Oil
- ½ Tsp. dried oregano
- ½ small onion minced
- 1 Cup of Marinara Sauce, for dipping
- Salt to taste
Directions
- In a pot, heat water with salt boiling, add Riced Medley and cook for 3 minutes.
- Allow to steam for 3 minutes, remove from heat and strain, let cool.
- In a bowl add egg, milk and whisk.
- In a mixing bowl add Riced Medley, egg with milk whisked, breadcrumbs, parmesan cheese, onions and seasoning.
- Mix all together, if necessary, add more breadcrumbs to keep together.
- Take a small handful and flatten into your cupped hand to form into a ball shape. Firmly stuffing one cube of mozzarella inside each ball. Repeat the process for each one.
- Add oil in the air fryer, for approx. 15 minutes at 375 degrees, until golden brown. Let cool and serve with Marinara Sauce.
