Ingredients
- 2 Packages Harvest Fresh Zucchini Spirals, chopped
- 4 Harvest Fresh Shallots, chopped
- 1 Red Pepper, seeded, diced
- 1 Leek, chopped
- 4 Eggs, lightly beaten
- 1/4 cup Olive Oil
- 2 ½ cup Feta cheese, crumbled
- 1 Cup Parmesan Cheese, grated
- 1 Cup Bacon Bits, crispy bits
- 2 Tbsp. Fresh Basil, finely chopped
- 2-3 Tbsp. Flour
- 1 Tsp. Salt
- ¼ Tsp. Black Pepper
Directions
- Preheat oven at 350 degrees. Grease a 9” Pie Dish (or Spring form pan).
- Salt Zucchini Spirals, and wrap in a clean towel, drain all access water.
- In a large bowl, add Eggs, Zucchini Spirals, Shallots, Leeks, red peppers, olive oil, feta cheese, parmesan cheese, basil, bacon bits, black pepper, taste for salt, mix (whisk) until fully combined.
- In Greased Pie Dish, sift a thin layer of flour on surface, add Zucchini Spiral mixture in pan and spread evenly.
- Bake for 60 min, until centre is firm, and golden brown. Once cooked, remove from oven, let cool and ready to serve.
