Ingredients

  • 1 Package Harvest Fresh Zucchini Veggie Sheets
  • 2 x 125g Fresh Mozzarella, sliced
  • 1 Jar (680mL) Passata Tomato Sauce
  • 1 Garlic Clove peeled and whole
  • 3 Tbsp. Basil, fresh leaves
  • ¼ Cup Parmesan cheese, grated, topping
  • 1 Tsp. Olive Oil
  • Salt to taste

What You Need

Directions

  1. Pre-heat Grill on medium to high heat. Lightly spray with cooking spray, and grill each zucchini sheet, with grilled marks, approx. 2 minutes per side.
  2. In a pot, on high heat, add oil, reduce heat, add garlic, sauté until fragrant, add tomato sauce, salt and fresh basil. Cook for 20 minutes, until cooked.
  3. In a skillet, coat bottom with cooked tomato sauce add grilled zucchini, add sauce evenly on top, sprinkle parmesan cheese and add sliced cheese. Repeat process for an additional layer with remaining Zucchini sheets, place lid on top and cook until cheese is melted. Remove from heat and ready to serve.
