Ingredients

  • 1 Package Harvest Fresh Zucchini Veggie Sheets
  • ½ Cantaloupe, sliced in half, seeds removed
  • 1 Cup Cherry Tomatoes, sliced halved
  • 8 Slices Prosciutto, rolled
  • 1 Cup Ricotta, crumbled
  • 2 Tbsp. Balsamic Vinegar Glaze

What You Need

Directions

  1. Remove Zucchini Veggie sheets from package, salt each sheet and leave for 10 minutes pat dry with paper towel to reduce moisture.
  2. Using a melon baller, scoop cantaloupe to form melon ball.
  3. On a large plate, arrange Zucchini Veggie Sheets into ribbons, add melon balls, Prosciutto, cherry tomatoes and ricotta.
  4. Drizzle balsamic vinegar glaze on top of entire salad and ready to serve.
