Ingredients
- 1 package Harvest Fresh Zucchini Spirals
- 1 cup grape tomatoes, halved
- ½ cup Kalamata olives, pitted (optional)
- ¼ cup crumbled feta
- ¼ red onion sliced thin
- ¼ cup lemon juice, or juice of 1 lemon
- 2 Tbsp olive oil
- 1 Tbsp balsamic vinegar
- 1 tsp fresh oregano, chopped
- Salt and pepper to taste
Directions
- Squeeze the lemon juice over the zucchini spirals and let sit in the fridge for about 10 minutes
- Cut the grape tomatoes in halves. If you prefer, cut the olives in half as well.
- Mix the olive oil, balsamic and fresh oregano together to make a dressing
- Toss all the ingredients together and season with salt and pepper to taste
