Ingredients
- 2 Packages Harvest Fresh Zucchini Spirals
- 1 Lb. Ground meat of preference
- 1 Large Egg, beaten
- ½ Cup Breadcrumbs
- ½ Cup Mozzarella Cheese, shredded
- ¼ Cup Parmesan Cheese
- 1 Onion, finely Chopped
- 2 Garlic Cloves, finely chopped
- ¼ Cup Parsley, fresh finely chopped
- 1 Jar, Tomato sauce, basil
- Salt to taste
- 2 Tbsp. Olive Oil
- Basil for garnish
Directions
- For Meatballs: In a large bowl, add ground meat, egg, breadcrumbs, mozzarella cheese, parmesan cheese, garlic, onion, 1 cup Zucchini Spirals chopped, parsley, and salt. Mix well.
- Form meat mixture into round meatballs and repeat process for each.
- In a pot, add tomato sauce, bring to a boil, then reduce heat, add meatballs cook on low heat for 50 minutes, until cooked.
- In a skillet, add olive oil, Zucchini Spirals, salt and pepper and sauté for 3 minutes, until cooked.
- On a plate, add sautéed Zucchini Spirals, top with tomato sauce from meat balls, parmesan cheese and basil, serve with Zucchini Meat balls and ready to serve.
