Ingredients

  • 2 Packages Harvest Fresh Cubed Vegetable Medley
  • 1 Lemon, zest and juice
  • 3 Tbsp. Olive Oil
  • 1 Tsp, Oregano
  • ½ Tsp. Thyme and Rosemary, fresh chopped
  • 1/4 Tsp, Red Chili Flakes
  • 2 Garlic Cloves, finely chopped
  • 2 Tsp, Honey
  • Salt and pepper to taste

Directions

  1. In a pot, boil Cubed Vegetable Medley. Boil until firm, for 10 minutes.
  2. In a bowl, add lemon zest, lemon juice, oregano, thyme, rosemary, olive oil, chili flakes, honey, garlic, salt and pepper, mix until fully combined.
  3. Layer a baking sheet with Parchment paper spray with Olive oil, add vegetable medley pour ½ of dressing on top until fully combined.
  4. Bake for 10 minutes at 400 degrees and flip and toss after 10 minutes, bake, add remaining dressing and bake for 10 minutes, until crispy and cooked, remove from oven top with fresh thyme.

