Ingredients

  • 1 Cup Harvest Fresh Cubed Sweet Potatoes, roasted, pureed
  • 1 Egg
  • 1 ½ Cup White Flour, all purpose
  • ½ Cup Butter, room temperature
  • ½ Cup Greek Yogurt, extra creamy
  • 1 Tsp. Baking Powder
  • 1 Tsp. Baking Soda
  • 1 Cup Brown Sugar
  • 1 Tsp. Vanilla Extract
  • 1 Tsp. Cinnamon
  • ¼ Cup Chocolate Chips
  • ½ Tsp. Salt

Directions

  1. Sweet Potato Mixture: Using a hand blender, in a large bowl, add butter, brown sugar, cinnamon, mix until fully combined. Add egg, vanilla extract, sweet potato, Greek yogurt, blend well.
  2. Flour Mixture: In a bowl, add flour, baking soda, baking powder and salt, mix well.
  3. Add flour mixture into sweet potato mixture, mix until combined. Then add chocolate chips and mix well.
  4. In a loaf pan, lightly spray with cooking spray, add sweet potato mixture, bake at 350 degrees for 45-55 minutes. Insert a toothpick in middle, if toothpick comes out dry, loaf is ready. Let cool for 15 minutes, and ready to serve.

