Ingredients

  • 1 Package Harvest Fresh Cubed Sweet Potato, boiled
  • 2 ounces cream cheese, less fat
  • 1/4 cup Greek yogurt, plain
  • 1 Tbsp. Milk
  • 1 Tsp. Fresh Rosemary, finely chopped
  • Kosher salt and black pepper to taste
  • 4 slices bacon, cooked, crisp, crumbled
  • 1 Package Tart Shells
  • Chives, garnish

Directions

  1. Preheat oven at 350 degrees.
  2. In a food processor, add boiled cubed sweet potatoes, cream cheese, Greek yogurt, milk, rosemary, salt and pepper, purée until smooth.
  3. Place Tart shells on a baking sheet, bake for 8 minutes, remove from heat.
  4. Fill Tart shells with Sweet Potato filling, using a piping bag, and bake for 7 minutes, remove from heat.
  5. Top with bacon pieces and chives and ready to serve.

