Ingredients

  • 1 Package Harvest Fresh Riced Medley
  • 8 Large Eggs
  • 1 Large Onion, sliced
  • ½ Cup half and half cream
  • 1 Cup Shredded Cheese, mixed
  • 1 Cup Bacon pieces, cooked
  • 1 Tbsp. Olive Oil
  • Salt and Pepper to taste
  • Chives, garnish

Directions

  1. Preheat oven at 375 degrees. Spray a 12-cup muffin tin with non- stick cooking spray, set aside.
  2. In a skillet, add oil, onion, Riced Medley, salt, and pepper, cook for 2 minutes, set aside.
  3. In a large bowl, whisk together eggs and half and half cream, until combined, add riced medley, bacon, shredded cheese, salt, and pepper.
  4. Place mixture filling halfway to the top of each cavity.
  5. Place in oven and bake for 25 minutes, until fully cooked.
  6. Remove from heat, top with bacon, chives and ready to serve.

