Ingredients

  • 1 Package Harvest Fresh Spinach
  • 4 Flour tortillas, 8 inches in diameter
  • 1 Cup Mozzarella Cheese, shredded
  • ½ Cup Crumbled Feta Cheese
  • 1 tsp. dried oregano
  • 1 tsp. red pepper flakes
  • 1 tsp. garlic powder
  • 2 Tbsp. Olive Oil
  • Nutmeg, pinch
  • Salt and pepper, pinch
  • Sour Cream, serving

Directions

  1. In a skillet on medium heat, add spinach, salt, pepper, and nutmeg. Cover and cook, until wilted. Remove any excess moisture from Spinach.
  2. On half of your Tortilla, place mozzarella cheese, spinach, red pepper flakes, oregano, top with more mozzarella cheese, feta, and garlic powder. Fold in half. Repeat for each Tortilla.
  3. In a skillet on medium to low heat, add oil, quesadilla, cook until golden brown, approximately 4 minutes on each side. Repeat for each Tortilla. Slice in halves, and ready to serve with sour cream.
