Ingredients
- 1 Package Harvest Fresh Cubed Sweet Potato
- 2 Cups Harvest Fresh Spinach
- 2 Cups Harvest Fresh Kale Super Blend
- 1 kg Egg Whites, Carton
- 1 Cup Mushrooms, diced
- 3 Garlic Gloves, finely chopped
- 1 Red Onion, Sliced
- ¾ Cup Shredded Cheddar and Mozzarella Cheese
- 4 Tbsp. Oil
- Salt and Pepper to Taste
- Bacon Pieces, Topping
Directions
- Preheat oven at 375 degrees.
- In a large bowl, add cubed sweet potatoes, salt, black pepper, and 3 Tbsp. Olive oil, mix well.
- In oven tray, add cubed potatoes and spread evenly on the pan. Place in oven, bake for 20 minutes, until soft, set aside.
- In a Skillet on high heat, add oil, once oil is hot, reduce heat add garlic, onions, cook until translucent, then add mushrooms cook for 2 minutes, add Kale Super Blend, cook until slightly wilted, add Spinach and cook until wilted, add roasted cubed sweet potatoes, cook for one minute.
- Remove from heat, add egg whites, salt, pepper, and shredded cheese.
- Place in oven at 350 degrees for 30 minutes, until golden brown and fully cooked. Let cool and top with bacon pieces and ready to serve.
