Ingredients
- 1 Cup Cottage Cheese
- 3 Eggs, large
- 1 Cup Almond Flour
- ¼ Tsp. Baking Powder
- 1 Tsp. Italian Seasoning
- ¼ Tsp. Garlic Powder
- ½ Tsp. Salt
Toppings
- 1 Bag Harvest Fresh Spinach
- 1 Cup Mozzarella and Cheddar Cheese, Shredded
- 1 Red Bell Pepper, de-seeded, sliced
- 1 Tbsp. Garlic, minced
- 1 Tbsp. Olive Oil
- 1 Tsp. Salt
Directions
- Pre-heat oven at 400 degrees and line a baking sheet with parchment paper.
- In a skillet, add Olive Oil, add garlic sauté, until fragrant, add peppers, sauté until softened, add spinach, sauté until wilted, add salt. Mix well and set aside and let cool.
- In a large bowl, add cottage cheese, eggs, almond flour, salt, Italian seasoning, garlic powder and baking powder, mix until completely combined.
- Pour the batter on baking sheet and spread evenly forming a circle.
- Bake for 20 minutes until crust is golden brown and firm.
- Top with shredded mozzarella cheese, sauteed spinach mixture, add back in oven for 5 minutes until cheese is melted. Remove from heat and garnish with Parmesan Cheese.
