Ingredients

  • 1 Package Harvest Fresh Cubed Butternut Squash
  • 2 Honey Crisp Apples, peeled, cored, diced
  • 2 Tbsp Brown Sugar
  • 2 Tbsp. Butter, divided in 8 pcs.
  • 1 Tbsp. Cinnamon
  • 1 Tsp. Pure Vanilla
  • ¼ Cup Pecans, chopped
  • 2 Tbsp. Olive Oil
  • French Vanilla Ice Cream Topping
  • Honey, drizzle

Directions

  1. Preheat Oven at 400 degrees, light spray baking dish.
  2. In a large bowl, add butternut squash, apples, olive oil, cinnamon, vanilla, and brown sugar, mix until fully combined.
  3. In a baking dish, add butternut squash mixture and spread evenly, add dollops of butter on top of mixture and place in oven for 25 minutes.
  4. Remove from heat and top with Ice cream, pecans, and drizzle with honey and ready to serve.
