Ingredients

  • 2 Package Harvest Fresh Riced Cauliflower
  • 2 Cups Shredded Cheese, Cheddar or Mozzarella
  • 2 Large Eggs, whisked
  • 4 Tsp. Garlic powder
  • Salt and Pepper to taste
  • Everything bagel seasoning
  • Herb and garlic cream cheese- topping
  • Cucumber, sliced, topping
  • Red Pepper, sliced, topping

Directions

  1. In a saucepan, add an inch of water, cauliflower rice, with the lid, steam for 6-8 minutes, until softened; remove from heat and let cool.
  2. Using a clean dishtowel, drain cauliflower rice, and squeeze out as much water as possible.
  3. In a bowl, add steamed cauliflower rice, egg, and cheese. Mix all together, then add garlic powder, salt and pepper and mix well.
  4. Using a donut baking pan (12 Cavity), lightly spray the pan with cooking spray, add Cauliflower mix to fill each cavity.
  5. Place in oven at 375 degrees for 20 minutes until cooked and golden brown.
  6. Remove from heat. Let cool for 5 minutes and remove from baking pan.
  7. Take one, using it as your bottom half and add herb and garlic cream cheese, cucumber, and red pepper for toppings, or toppings of preference, then take another to use as your top half of bagel and sprinkle top with everything bagel seasoning. Repeat for each one. Makes 6 Mini Cauliflower Bagels.

