Ingredients
- 1 Package Harvest Fresh Cubed Sweet Potatoes
- 3 Harvest Fresh Shallots, finely Chopped
- 2 Raw Harvest Jalapenos, seeded + sliced rounds for topping
- ½ Red and Yellow pepper- roughly sliced
- 1 Bag Tortilla Chips
- 1 Lb. Ground Beef
- 227g Cremini Mushrooms, quartered
- 3 cups Mixed Tex Mex Cheese, shredded
- 2 Garlic Cloves, minced
- ¼ Cup Cilantro, finely Chopped
- 1 Pkg. Taco Seasoning mix
- 2 Tbsp. Oil, divided
- ½-1 Cup Water
- Salt and pepper to taste

Directions
- Pre-heat Oven at 400 degrees, Line a baking sheets with parchment paper.
- In a large bowl, add cubed Sweet Potatoes, 1 Tbsp. oil, salt and pepper. Mix until fully combined. Place on baking sheet and spread evenly, bake for 30 minutes, until brown and cooked.
- In a large skillet on medium to high heat, add 1 Tbsp. oil, add onion, sauté until translucent, add garlic, sauté until fragrant. Add ground beef, mushrooms, peppers, Taco seasoning, jalapenos, add ½ cup of water, reduce to medium and cook until water is reduced by half. Once cooked, remove from heat.
- Add Tortilla Chips on baking sheet and spread, sprinkle with half of shredded cheese, beef mixture, roasted cubed sweet potatoes, top with remaining shredded cheese. Bake in oven until cheese is melted and ready to serve.
