Ingredients
- 1 Package Harvest Fresh Riced Cauliflower
- 1 Cup Harvest Fresh Spinach
- 1 Steak, cooked and sliced
- 3 Tbsp. Butter, unsalted
- ½ Cup Chicken Stock
- 1 Onion, finely chopped
- 3 Garlic Cloves, minced
- ½ Tsp. thyme
- Salt and Pepper to taste
Creamy lemon sauce
- 1 Cup Heavy Cream
- 1 Cup White Cheddar Cheese, grated
- ¼ Cup Parmesan cheese, grated
- 1 Lemon, juice
- ½ Lemon, zest
- 1 Tsp. Salt
Directions
- In a Skillet on high heat, add butter, add onions, sauté until translucent, add garlic, and thyme, sauté until fragrant.
- Add cauliflower rice, salt, pepper, and broth, continue stirring for 8 minutes, until moisture is reduced.
- Remove 1 Cup of Cauliflower mixture and set aside.
- Add Spinach, cook until wilted and remove from heat.
- In a pot, on medium to high heat, add 1 cup Cauliflower mixture, heavy cream, white cheddar, parmesan cheese, lemon juice, lemon zest and salt. Cook until cheese has melted.
- In a large bowl, add Cauliflower spinach rice mixture, cooked steak, and top with creamy lemon sauce and ready to serve.
