Ingredients
- 1 Package Harvest Fresh Cipolline Onion, sliced
- 2 Cups Harvest Fresh Spinach
- 4 Cups Beef Broth
- 2 Tbsp. Butter
- 4 Tbsp. Scamorza cheese, cubed, or cheese of preference
- 2 Slices Provolone Cheese
- 2 Ciabatta bread, sliced
Directions
- In a Large pot, on high heat, bring broth to a light boil, let simmer for 5 minutes.
- In a pan, on medium to high heat, add butter, once melted add Cipolline onions, cook until translucent and browned. Then add spinach and cook, until slightly wilted.
- Add Cipolline onions and Spinach in broth, and simmer for 30 minutes.
- Preheat Oven at 400 degrees on Broil.
- In an onion soup bowl, add 2 Tablespoon of Scamorza cheese, onion soup, 1 slice of Ciabatta bread and top with 1 slice of provolone cheese. Repeat for each bowl.
- Place in oven, for 2 to 3 minutes, until cheese is melted and slightly browned. Then ready to serve.
