4 Tbsp. Scamorza cheese, cubed, or cheese of preference
2 Slices Provolone Cheese
2 Ciabatta bread, sliced
What You Need
Preparation
In a Large pot, on high heat, bring broth to a light boil, let simmer for 5 minutes.
In a pan, on medium to high heat, add butter, once melted add Cipolline onions, cook until translucent and browned. Then add spinach and cook, until slightly wilted.
Add Cipolline onions and Spinach in broth, and simmer for 30 minutes.
Preheat Oven at 400 degrees on Broil.
In an onion soup bowl, add 2 Tablespoon of Scamorza cheese, onion soup, 1 slice of Ciabatta bread and top with 1 slice of provolone cheese. Repeat for each bowl.
Place in oven, for 2 to 3 minutes, until cheese is melted and slightly browned. Then ready to serve.
