Ingredients
- 1 Package Harvest Fresh Zucchini Sheets
- 6 Large Eggs, boiled
- ½ Cup Green Onions, chopped
- ½ Cup Mayonnaise
- ¼ Tsp Garlic Powder
- 1 Tsp Dijon Mustard
- Salt and Pepper to taste
Directions
- Pre-heat Grill on medium to high heat. Lightly spray with cooking spray.
- Grill Zucchini Sheets 2 minutes per side with grill marks.
- In a large bowl, add boiled eggs and break them up with a fork.
- Add mayonnaise, onions, garlic powder, Dijon Mustard, salt and pepper. Mix well.
- Lay grilled Zucchini sheets on a plate, fill with egg mixture and gently roll, starting with rounded end. Repeat for each, place on a serving platter and ready to serve.
