Remove the turkey from netting, add provolone cheese, pancetta slices and spinach in centre of Turkey.
Roll Turkey up with filling, ensuring turkey is sealed and place back in netting, add salt, and pepper. With a brush cover the whole turkey with Dijon mustard. Massage well.
In an oven pan, add carrots, celery, Cipolline onions and garlic, placing around the pan. Then place turkey directly in the centre of pan, add butter, and top with oil.
Place in oven at 375 degrees for 3 hours, until cooked.
Serve with Broccoli and Carrots. Add gravy or cranberry sauce for the side.
