Ingredients

1 Package Harvest Fresh Cubed Sweet Potatoes
½ Package Harvest Fresh Chopped Kale
1 Cup Red Split lentils
3 Celery Stalks, Chopped
3 Garlic Cloves, Finely Chopped
1 Large Onion, sliced
8 Cups, Vegetable Broth
1 Can diced Tomatoes
2 Tsp. Italian Seasoning
Salt and Pepper to Taste

What You Need

Directions

1. In a large pot, on medium heat, add oil, onions, cook until translucent. Add, celery and garlic, cook for 3 minutes.
2. Then add cubed sweet potatoes, lentils, vegetable broth, diced tomatoes, seasoning, salt and pepper, bring to a boil, then reduce to low heat and simmer for 40 minutes until, sweet potato is soft.
3. Add chopped kale, cook until wilted, then ready to serve.
