Ingredients
- 1 Package Harvest Fresh Riced Medley
- 8 Large Eggs
- 1 Large Onion, sliced
- ½ Cup half and half cream
- 1 Cup Shredded Cheese, mixed
- 1 Cup Bacon pieces, cooked
- 1 Tbsp. Olive Oil
- Salt and Pepper to taste
- Chives, garnish
Directions
- Preheat oven at 375 degrees. Spray a 12-cup muffin tin with non- stick cooking spray, set aside.
- In a skillet, add oil, onion, Riced Medley, salt, and pepper, cook for 2 minutes, set aside.
- In a large bowl, whisk together eggs and half and half cream, until combined, add riced medley, bacon, shredded cheese, salt, and pepper.
- Place mixture filling halfway to the top of each cavity.
- Place in oven and bake for 25 minutes, until fully cooked.
- Remove from heat, top with bacon, chives and ready to serve.
