Ingredients
- 1 1/2 Cup Harvest Fresh Spinach
- 1 Cup Flour, all purpose
- 1 Cup Buttermilk
- 1 Large egg, beaten
- 1 Tbsp. Canola Oil
- 1 Tsp. Baking Powder
- ½ Tsp. Baking Soda
- ½ Tsp. Salt
- 2 Tbsp. Butter
- Strawberries, Topping
Directions
- In a blender, add Spinach, buttermilk, egg, oil, blend until combined and smooth.
- In a large bowl, add flour, baking powder, baking soda, and salt. Whisk together, until combined.
- Add spinach mixture into dry ingredients and whisk until smooth.
- In a pan or griddle, add butter, once melted, add pancake mixture, bake on one side, until bubbles and flip, bake other side, until golden brown.
- Repeat for each pancake. Top with strawberries and syrup, if preferred and ready and serve.
