Ingredients

  • 1 Bag Harvest Fresh Spinach
  • 4 Sheets Butter Puff Pastry Sheet
  • 2 Tbsp. Butter
  • 1 Onion, diced.
  • 2 Garlic Cloves finely chopped.
  • ½ Cup Cream Cheese
  • ½ Cup Mozzarella, grated
  • 1 Egg White
  • 1 Tsp. dried parsley
  • 1 Egg Yolk, egg wash for brushing
  • Every bagel seasoning, garnish
  • Salt and Pepper to Taste

Directions

  1. Pre-heat oven at 350 degrees.
  2. For filling: In a skillet, on medium heat, add butter, once melted, add garlic, sauté until fragrant, add onion, sauté until translucent. Add Spinach, sauté until wilted and moisture is reduced, add salt and pepper to taste. Set aside and let cool.
  3. In a bowl, add spinach mixture, cream cheese, mozzarella cheese, egg white, dried parsley, and mix until combined.
  4. Using a circle cookie cutter, cut 6 circles out of each Puff Pastry Sheet. Set 12 circles aside. Spread Spinach filling over 6 and cover with the other circle half. Repeat for remaining 2 Puff Pastry Sheets. Making 24 circles.
  5. Brush with egg wash, sprinkle with everything bagel seasoning.
  6. Bake for 20 minutes, ready to serve hot or cold.
