Ingredients
- 1 Bag Harvest Fresh Kale Super Blend
- 3 Harvest Fresh Nantes Carrots, sliced coin halves
- 3 Garlic Cloves, finely chopped
- 1 Red Onion, finely chopped
- 3 Cups Vegetable Broth
- 398g Fire Roasted Diced Tomatoes, can
- 400g Chickpeas, drained and rinsed
- 1/2 Zest of Lemon
- 1 Tbsp. Lemon Juice
- 2 Bay Leaves
- 1/2 Tsp. Chili Flakes
- 1 Tbsp. Olive Oil
- Salt and Pepper to Taste
Directions
- In a saucepan, add olive oil, add onion sauté until golden, add garlic sauté until fragrant
- Add carrots, lemon zest and chili flakes, sauté for 2 minutes.
- Add Diced Tomatoes, bay leaves, vegetable broth and simmer on medium heat for 15 minutes.
- Add Kale Super blend, lemon juice and simmer for 10 minutes, until Kale has wilted, and carrots are cooked. Then add Chickpeas, season with salt and pepper.
- Remove from heat, remove Bay Leaves, and ready to serve.
