Ingredients
- 1 Package Harvest Fresh Cubed Sweet Potato
- 1 lb.Ground Meat
- 1 Egg
- 1 Onion, finely chopped
- 2 Tsps. Parsley finely chopped.
- ½ Cup Breadcrumbs
- 6 Cheese Strings, cut in cubes.
- 2 Sheets Butter Puff Pastry
- 1 Cup Mozzarella
- ¼ Cup Parmesan Cheese
- Egg Wash
- 1 Tsp. Italian Seasoning
- 1 Tsp Salt, divided.
- ¼ Tsp. Pepper
Directions
- Pre-heat oven at 375 degrees.
- In a pot, add water, cubed sweet potatoes, boil until soft and tender.
- In a bowl, add ground meat, add egg, breadcrumbs, onion, Italian seasoning, ½ Tsp. Salt, and pepper, mix until combined.
- Take a spoon full of meat mixture and form into a ball, add a cheese string cube in the centre of meat ball and re-form into a ball, until cheese is covered. Repeat for each and set aside.
- In a bowl, mash cubed sweet potato, add parsley, mozzarella cheese, parmesan cheese, ½ Tsp. Salt, mix until fully combined, and set aside.
- For assembly, slice each Puff Pastry Sheet into 4 squares, add a spoon full of sweet potato mixture, add a meatball, then wrap Puff Pastry forming a ball.
Repeat for each. - Cover with Egg wash and form an X at the top, peeling each corner slightly to make an opening for each and add cheese string cube on top of each.
- Bake for 30 minutes, until golden brown and cheese is melted. Remove from heat, serve with sauce for dipping.
