Ingredients

  • 1 Package Harvest Fresh Cubed Sweet Potatoes
  • 1 (9 inch) Pie Crust, unbaked
  • ½ Cup Evaporated milk
  • 2 Eggs, whisked, room temperature
  • ½ Cup Brown Sugar
  • ½ Cup White Sugar
  • 4 Tbsp. Butter, melted
  • 1 Tsp. Vanilla Extract
  • 1 Tsp. Cinnamon
  • 1 Tbsp. Flour
  • Nutmeg, pinch

Directions

  1. In a large pot, add cold water and salt, add cubed sweet potato and boil, until sweet potatoes are soft, drain and, let cool.
  2. Place Sweet potatoes in a large bowl, using a fork, mash sweet potatoes, then add butter, using a hand blender, mix well.
  3. Add eggs, white sugar, brown sugar, evaporated milk, cinnamon, nutmeg, and vanilla extract. Mix on medium speed until mixture is smooth, using a spatula, scrap the sides, then add flour, mix, until combined.
  4. Fork the centre and side of pie crust as package directs, then pour sweet potato mixture into pie crust and spread evenly.
  5. Bake at 375 degrees for 50 minutes, or until toothpick is inserted in centre comes out clean and let cool and ready to serve.
