Ingredients
- 1 Package Harvest Fresh Cubed Sweet Potatoes
- 1 (9 inch) Pie Crust, unbaked
- ½ Cup Evaporated milk
- 2 Eggs, whisked, room temperature
- ½ Cup Brown Sugar
- ½ Cup White Sugar
- 4 Tbsp. Butter, melted
- 1 Tsp. Vanilla Extract
- 1 Tsp. Cinnamon
- 1 Tbsp. Flour
- Nutmeg, pinch
Directions
- In a large pot, add cold water and salt, add cubed sweet potato and boil, until sweet potatoes are soft, drain and, let cool.
- Place Sweet potatoes in a large bowl, using a fork, mash sweet potatoes, then add butter, using a hand blender, mix well.
- Add eggs, white sugar, brown sugar, evaporated milk, cinnamon, nutmeg, and vanilla extract. Mix on medium speed until mixture is smooth, using a spatula, scrap the sides, then add flour, mix, until combined.
- Fork the centre and side of pie crust as package directs, then pour sweet potato mixture into pie crust and spread evenly.
- Bake at 375 degrees for 50 minutes, or until toothpick is inserted in centre comes out clean and let cool and ready to serve.
