Ingredients
- 1 Package Harvest Fresh Cubed Sweet Potato
- 1 Cup Harvest Fresh Spinach, chopped
- ½ cup Onions, finely chopped
- 1 Cup Breadcrumbs, Italian Style
- 1 Lb. Ground Turkey
- 2 garlic cloves, minced
- ½ Tsp. Ground Pepper
- 1 Tbsp. Chicken Bovril
- 3 Tbsp. Olive Oil
- 2 Eggs, beaten
- Hamburger bun, of preference
ToppingÂ
- 1 Package Harvest Fresh Zucchini Spirals
- 1 Large Onion, Sliced
- Roasted Red and Orange Peppers, sliced
Directions
- In a large bowl, add cubed sweet potatoes, olive oil, salt, and pepper. Mix well.
- On a baking sheet, add sweet potatoes, bake for 30 minutes at 375 degrees. Set aside to cool, for 10 minutes.
- Place Sweet potatoes in a large bowl, using a fork, mash sweet potatoes, mix well, until smooth.
- Add ground turkey, spinach, garlic, onions, chicken Bovril, ground pepper, breadcrumbs, and eggs, mix until fully combined, then form into patties.
- Place on grill and cook for 8 minutes each side, until fully cooked.
- In a pan, add oil, sauté peppers for 5 minutes, cook until soft, add onions, sauté until translucent, add Zucchini Spirals and cook for 3 minutes, cook until soft.
- To assemble:Â On the bottom half of your bun, add sweet potato spinach turkey burger, roasted red peppers, onions, zucchini spirals, and place bun on top. Ready to serve.
