Ingredients

  • 1 Package Harvest Fresh Cubed Vegetable Medley
  • 1Lb Ground lean Beef, minced
  • 1 Cup Vegetable Broth
  • 1 Cup Leeks, diced
  • 2 Garlic Cloves, minced
  • 1 Roasted Pepper, chopped
  • 1 ½ Cup Cremini Mushrooms, finely chopped
  • ¾ Cup gruyere cheese, shredded
  • 1 Tbsp. Olive Oil
  • 1 ½ Tsp. Smoked Paprika
  • Fresh Cilantro or Parsley, garnish
  • Salt and Pepper to taste

Directions

  1. Heat oil in a Skillet, add oil, ground beef, sauté until cooked and browned.
  2. Add leeks, garlic, mushrooms, cubed vegetable medley, roasted peppers, mix until fully combined. Season with paprika, salt and pepper.
  3. Add Vegetable broth, mix until fully combined. Cover with lid on medium heat, cook until vegetable medley has softened. Add Gruyere cheese, cook until cheese is melted.
  4. Remove from heat, place in a bowl, garnish with cilantro and ready to serve.
