Ingredients
- 1 Package Harvest Fresh Cubed Vegetable Medley
- 1Lb Ground lean Beef, minced
- 1 Cup Vegetable Broth
- 1 Cup Leeks, diced
- 2 Garlic Cloves, minced
- 1 Roasted Pepper, chopped
- 1 ½ Cup Cremini Mushrooms, finely chopped
- ¾ Cup gruyere cheese, shredded
- 1 Tbsp. Olive Oil
- 1 ½ Tsp. Smoked Paprika
- Fresh Cilantro or Parsley, garnish
- Salt and Pepper to taste
Directions
- Heat oil in a Skillet, add oil, ground beef, sauté until cooked and browned.
- Add leeks, garlic, mushrooms, cubed vegetable medley, roasted peppers, mix until fully combined. Season with paprika, salt and pepper.
- Add Vegetable broth, mix until fully combined. Cover with lid on medium heat, cook until vegetable medley has softened. Add Gruyere cheese, cook until cheese is melted.
- Remove from heat, place in a bowl, garnish with cilantro and ready to serve.
