Ingredients
- 2 Cups Harvest Fresh Zucchini Spirals
- Icing Sugar, Sprinkle topping
- Cinnamon, Sprinkle topping
Wet Ingredients
- 3 Eggs
- 2 Cups. Sugar
- 1 Cup. Vegetable Oil
- 1 Tsp. Vanilla Extract
Dry Ingredients
- 2 Cups. Flour, All purpose
- 2 Tsp. Baking Powder
- ¼ Tsp. Baking Soda
- 2 Tsp. Cinnamon
- 1 Tsp. Salt
Directions
- Preheat oven at 350 degrees. Lightly spray your Bundt pan with Cooking Spray.
- In a Bowl, add all dry ingredients, and blend well.
- In a large bowl, add eggs, using a hand blender, mix well, add sugar, mix, add vanilla and oil, mix until all combined
- Slowly add Step #2 into Step#1 and blend well. Then add Zucchini Spirals and blend well.
- Pour batter into baking pan. Bake for 1 hour, until a toothpick is inserted in cake and comes out clean.
- Remove from oven, allow to cool for 10 -15 minutes, and remove from pan.
- When ready to serve, sprinkle Icing Powder and Cinnamon and ready to serve.
