Ingredients
- 1 Package Harvest Fresh Zucchini Sheets
- 2 Cups Breadcrumbs, coating
- ¼ -½ Cup Parmesan Cheese, grated
- 12 Slices, Prosciutto
- 1 Jar, Fire Roasted Peppers, drained
- Provolone Cheese, Slices
- 1 Cup oil
- ½ Tsp. Italian Seasoning
- ½ Tsp. Salt
- ½ Tsp. Pepper
- Salt, sprinkle
Directions
- Pre-heat oven at 375 degrees, lightly coat baking dish with cooking spray.
- In a bowl, add oil, salt, and pepper. Whisk and set aside.
- In a flat dinner plate, add breadcrumbs, parmesan cheese, and Italian seasoning. Mix until combined.
- Coat Zucchini Sheets in oil, coat in breadcrumb mixture.
- Once coated, place 2 zucchini sheets, overlapping each other flat on your cooking surface, add cheese slices, prosciutto, and roasted peppers.
- Roll them from one end to another and place in baking dish.
- Bake for 35 minutes, until cheese is melted and cooked, and ready to serve.
