Ingredients
- 1 Package Harvest Fresh Zucchini Spirals
- 1 Package Cubed Sweet Potato, boiled
- 1 large Onion, diced
- 3 Garlic Cloves, minced
- 3 Cups Vegetable Broth
- 2 Tbsp. Extra Virgin Olive Oil
- ½ Tsp. Thyme
- ½ Tsp Salt
- ¼ Tsp Pepper
Garnish
- 1 Tbsp. Finely chopped Parsley
- 1 Garlic Glove, chopped fine
- 1 Tbsp. Lemon Zest
- Red chili sauce, drizzle
- Parmesan Cheese, topping
Directions
- In a large pot, heat oil, add onions, garlic, zucchini spirals, sweet potatoes, vegetable broth, thyme, salt, and pepper. Cook until vegetables are soft and tender. Using Immersion blender, blend until all combined.
- In a small bowl, add parsley, garlic, lemon zest. Mix until combined.
- Place soup in bowls, top with garnish, red chili sauce and parmesan, and ready to serve.
