Ingredients
- 1 Cup Harvest Fresh Zucchini Spirals
- 2 Packages Tortellini, cheese filled
- 1 Large Garlic Clove
- ¼ Cup Pine nuts
- 2 Cups Fresh Basil
- 3 Tbsp. Olive Oil
- 3 Tbsp. Water, as needed
Directions
- In a pot, add water and bring to a boil with salt, add cheese tortellini, cook as per package instructions. Remove from heat and drain water from pasta.
- In a blender, add water, oil, Zucchini Spirals, fresh basil, garlic, and pine nuts. Blend until combined and creamy.
- In pot with pasta, add Zucchini pesto and heat for 3 minutes, and ready to serve.
