Ingredients

  • 1 Package Harvest Fresh Riced Veggie Medley 
  • 1 lb. Lean ground turkey
  • 1 Tsp garlic powder
  • 1 Tsp ground cumin
  • 2 Tbsp. Taco seasoning
  • 1/2 Onion, chopped
  • 1/2 Cup. Bell peppers (green or red), chopped
  • 3/4 Cup Water
  • ½ Cup Tomato sauce
  • ¼ Cup Salsa
  • 2 Tsp. Olive Oil
  • Salt to Taste

Avocado Spread

  • 3 Avocados, ripe, mashed.
  • 1 Tbsp Lime Juice
  • ¼ Cup Cilantro, chopped
  • 1 tsp. Garlic Powder

Layered ingredients

  • 2 Cups Shredded Mozzarella and Cheddar Cheese
  • 1 Cup Sour Cream
  • ½ Cup Sliced Black Olives
  • 1 Large Tomato, diced
  • 1/3 Cup Raw Harvest Jalapenos, diced
  • 1/3 Cup Green Onions, Sliced

Directions

  1. Over medium heat, brown, the turkey in a large skillet breaking it into smaller pieces as it cooks, about 5 minutes.
  2. Add salt, onion, seasonings, salsa, tomato sauce, water, peppers, and cover.
  3. Simmer on low for 15 min.
  4. Remove cover and add riced veggie medley, salt, mix well until cooked for about 3 minutes.
  5. For Avocado Spread: In a bowl add mashed Avocados, cilantro, garlic powder and lime juice. Mix until fully combined.
  6. In a 9” dish, add meat mixture, avocado spread, sour cream, shredded cheese, diced tomatoes, black olives, Jalapenos, and green onions. Spread all items evenly in dish.
  7. Ready to serve with nacho chips.
