Ingredients
- 1 Package Harvest Fresh Riced Veggie Medley
- 1 lb. Lean ground turkey
- 1 Tsp garlic powder
- 1 Tsp ground cumin
- 2 Tbsp. Taco seasoning
- 1/2 Onion, chopped
- 1/2 Cup. Bell peppers (green or red), chopped
- 3/4 Cup Water
- ½ Cup Tomato sauce
- ¼ Cup Salsa
- 2 Tsp. Olive Oil
- Salt to Taste
Avocado Spread
- 3 Avocados, ripe, mashed.
- 1 Tbsp Lime Juice
- ¼ Cup Cilantro, chopped
- 1 tsp. Garlic Powder
Layered ingredients
- 2 Cups Shredded Mozzarella and Cheddar Cheese
- 1 Cup Sour Cream
- ½ Cup Sliced Black Olives
- 1 Large Tomato, diced
- 1/3 Cup Raw Harvest Jalapenos, diced
- 1/3 Cup Green Onions, Sliced
Directions
- Over medium heat, brown, the turkey in a large skillet breaking it into smaller pieces as it cooks, about 5 minutes.
- Add salt, onion, seasonings, salsa, tomato sauce, water, peppers, and cover.
- Simmer on low for 15 min.
- Remove cover and add riced veggie medley, salt, mix well until cooked for about 3 minutes.
- For Avocado Spread: In a bowl add mashed Avocados, cilantro, garlic powder and lime juice. Mix until fully combined.
- In a 9” dish, add meat mixture, avocado spread, sour cream, shredded cheese, diced tomatoes, black olives, Jalapenos, and green onions. Spread all items evenly in dish.
- Ready to serve with nacho chips.
